Taleggio (Italy, cow, pasteurised)

One of our most popular washed rind cheeses, this is a great alternative to mozzarella if you're looking for something to melt into a sandwich or on a pizza.  Pale pink rind gives way to luscious gooey paste, with a sharp yogurty tang.
