Stichelton (Nottinghamshire, cow, unpasteurised)

Essentially a raw milk Stilton style cheese, but SO much more! The range of flavours in this cheese is incredible; sometimes toasty biscuity, sometimes green apple or even beef stock! This is sourced only through Neal's Yard Dairy, as they select the best of each batch as well as working closely with the makers to bring out the best from the milk.
