St Jude (Norfolk, cow, unpasteurised)

Inspired by St Marcellin, this is produced in Suffolk. Rich savoury buttery flavour, with a light almost fluffy centre. This cheese intentionally has a thin rind which can pick up wild moulds of blue, grey and green - these are perfectly safe and do not negatively affect the flavour of the cheese!
